I don't know if any off you have heard of Spotterwiki? http://www.spotterswiki.com Its a great website but only Sydney has been done in NSW and Melbourne is hardly even anytihing useful. Hey mate i live in newcastle and i fly out at the RAAF base. Its a little hard to get in but if you do its great and cheap. The people are a bit grumpy but you can handle it. or i would suggest the one out at Maitland or Cessnock flighting school they are both about the same price but i would be leaning towards maitland because its not as far.

I had a look at Brisbane and unfortunately there is no Hudsons :( but they do have an aroma http://www.bne.com.au/graphics/popups/aromas.jpg so i will definately give them a go. I always like a nice coffee!
